Simple 5 ingredient dinner in 15 minutes chicken rotel nachos
So, compliments of my wonderful, kind, giving, mother. I inherited a 40 lb box of chicken leg quarters, that I appreciate very much. Thanks Mom!!!
But the thing about this 40lb box of chicken leg quarters was they were all froze together in the box.
I've always heard that once meat has been froze and thawed it cannot be refrozen unless it's cooked. I'm not sure why, I never googled it, I just have always taken it for the gospel and never refroze without cooking.
unbeknownst to me, Thawing a 40lb box of chicken is not unlike thawing a turkey. So I was in a pinch, when 4:30 pm rolled around, and supper was late, and that chicken that had been thawing since 8am was still a frozen solid meat brick.
Supper time around here is 5pm. I don't know how other folks do it, but here on the plantation 9 out of 10 times when hubby rolls through that door at 5pm there is a piping hot plate of food ready and waiting for him. This however was that 10th time. But I had a plan.
I messaged him to grab a few simple ingredients and I turned a dip quick dip recipe into a nacho supper fit for a king. The crowd loved it. I'll deffinately put this one in my recipe roll-a-dex to use again. I don't actually have a roll-a-dex but remember when my parents did, and am thinking I should.
This nacho recipe only calls for 5 simple ingredients and cook time is just a matter of melting velveeta which is like no time at all.. This isn't something I would serve every day, but in a pinch, or if I'm looking for something fun and quick I would serve rotel chicken nachos again, even the 3 year old approved of this meal.
What the recipe? YOU CAN"T HANDLE THE RECIPE!!! hahaha.. just kidding, here it is..
Rotel and black bean chicken nachos
2 cans swanson grilled chicken breast drained
2 rans rotel tomatoes
1 can black beans drained
3/4 block velveeta cheese cubed
doritos (your choice of flavor)
pour all ingredients except doritos into a cast iron skillet and simmer on medium heat stirring frequently until cheese has completely melted then serve over a bed of doritos in your choice of flavor, we used nacho cheese flavored
*** this recipe would also work well with fritos, tortilla chips, french fries, tater tots, maybe even over a baked potato...
it might possibly be the fast supper I ever cooked on a budget and that pleased the masses... Recipe level - NO LEFTOVERS
