Hello ya'll. today I want to tell you about this fabulous new recipe a friend turned me on too... Oven fried pork chops... Yes!!! You heard me right.... OVEN FRIED PORK CHOPS WITH FLOUR!!!
Let me say it one more again for effect OVEN FRIED PORK CHOPS WITH FLOUR.
I'm a lazy cook and I own it, I want flavor and I want it to look like I slaved for hours. But I don't actually want to do that.. You know what I mean? so when she told me about oven frying pork chops, I was on board 120% maybe even more than that.. Because I got pretty excited at all the possibilities for this oven fried meat. I love fried chicken but rarely cook it because its just too much effort and I am helping raise the grandbabies and the three year old likes to help and the whole popping grease thing, I just don't fry things as much anymore. But she opened up a whole new world to me with just 4 words... Yup... OVEN FRIED PORK CHOPS.. All the Yum without all the hassle. Infact its a recipe she can even help me with.
This oven fried Pork chop recipe is a keeper and my family shall enjoy fried meats again, I can't wait to try in on chicken and country fried steak as well...
Here is what it looked like straight out of the oven.. Did I mention Oven fried pork chops recipe is a keeper? This is going to be on my table often.. Oven fried meats with flour... Heck yeah!!!!
Here is it plated with collard greens and my version of "hoppin' john" . There isn't much to tell about the collard greens except they were canned pre seasoned collard greens, that was a mystery basket item in the Chopped kitchen of my life. Not sure who bought it, but I cooked it up. All I really did was add a touch of salt and a bit of ham base and the collard greens were a done deal My huge family loves greens of any kind so the seasoned collard greens were a huge hit with the masses. No left overs!!!
The hoppin' John I can tell you a little more about because its made with the left overs from yesterday. Ill tell you the recipe at the end. Above is what The old grouch's plate looked like. NO LEFTOVERS on his plate, or anyone elses for that matter.
This is my plate, I had to have my Frank's red hot. Frank's red Hot is as awesome on greens as it is on oven fried pork chops. You gotta try it. I wasn't lying when I said "I put that shit on everything"
here are those recipes
OVEN FRIED FLOURED PORK CHOPS
10 pork chops
1 cup mayo (not miracle whip)
3 cups flour
1 tbsp garlic powder
2 tsp cayenne pepper
2 tsp lemon pepper
2 tsp seasoned salt
1 package lipton onion soup mix
Wash and pat dry pork chops lightly salt and pepper them to taste on both sides (you will be adding more salt and pepper to your flour mixture so use lightly on meat) then set aside while you mix your other ingredients
you will need 2 large bowls for this
put your mayo in the first bowl
(if you read many flour fried recipes you will see that they usually have an egg bath and are cooked in oil. Mayo is made up of only 2 ingredients.. Eggs and oil so this serves as both.)
In second bowl mix flour with all other spices and lipton onion soup mix powder
put meat into large bowl with mayo and and toss until meat is covered in mayo
Then dredge each piece in the flour mixture to cover on all sides
Place floured Pork chops onto a lightly greased baking sheet
do not cover
bake in a 375 degree oven for 45 minutes
you do not have to turn them during cooking
The hoppin' john recipe
2 cans pinto beans
1 cup diced ham
1 can whole kernel corn
1 can Stewed tomatoes
1 cup water
1/4 cup rice
garlic powder (to taste)
onion powder (to taste)
salt and pepper (to taste)
1 1/2 tbsp ham base
do not drain canned veggies, add all ingredients to a large pot and simmer over medium low heat with a slightly tilted lid until rice is done about 30-35 minutes stirring occasionally, it should not boil because you will lose your broth if you let it boil..
This Hoppin John recipe is actually supposed to be Hoppin John soup but my hubby is not a fan of soup so I dipped with a slotted spoon to make it more side dish-y for him.
The hoppin' john recipe could stand alone as a meal if you like soup you could serve it up in a bowl with a big ol' hunk of cornbread and enjoy it that way.
I have 10 different cornbread recipes I really should get around to sharing at some point....
