Loaded brownies with monk fruit sweetener and coffee flour



I love cooking meals, but I never bake sweets. That is my oldest daughters department and I let her have at it cuz I hate measuring and having to be so precise. But I baked brownies today, LOADED brownies at that. I put so many things in there, its insane. But they were a hit, they were moist fudgy type brownies, my son said they reminded him of little Debbie cosmic brownies, which are a favorite of his.

I baked brownies today because I had some ingredients that I ordered from nuts.com that I was dying to try. If I haven't mentioned it before. I love Nuts.com
they always have some new ingredient for me to experiment with.

Plus, their packing is so cute and fun. They might be one of my favorite sites to  order from. Isn't the packaging awesome? I love them so much that I am not affiliated but I am plugging them in this post anyway. Now that is love eh?

My brownies tho, that is what we are here to talk about. Those jokers we're all eaten. In my opinion they were better when they were warm, but still good cooled.

What makes them "LOADED" you ask? 
I call them loaded because they had coffee flour in them, Yes, I said Coffee flour, it's a thing. You see coffee is made from the seed that is inside of the fruit of a coffee plant, and the coffee fruit pulp is normally left to rot or dumped into the river. The brownies also had cereal marshmallows in them.. YUM!!!

The coffee flour and the cereal marshmallows in these awesome brownies both came from nuts.com I also added some Reese's peanut butter chocolate to these brownies for the sugar that it contained because after already starting the brownie mixture I realized I was out of sugar so I had to use sweetener made from monk fruit. I didn't tell them I used monk fruit sweetener and they didn't notice, so shhhhhhh... 

I used chocolate chips, cereal marshmallows, and Reese's peanut butter chocolate spread in the brownies so I think the sweetness from the three sweet ingredients helped camouflage the fact that I had not used actual sugar and as I mentioned they loved these brownies.

So here is the recipe for the fudgey brownies I made tonight...


Fudgy loaded brownies with monk fruit sweetener and cereal marshmallows

3/4 cup coffee flour
3/4 cup plain white flour
1 1/3 cups monk fruit sweetener (1 cup if using white sugar)
2/3 cup chocolate chips
1/3 cup cereal marshmallows
1/4 cup cocoa powder
1 tsp salt
1 tsp baking powder
2 eggs
1 1/4 cup milk
1 stick melted butter
1 1/2 tsp vanilla extract or flavoring
3 tbsp Reese's peanut butter chocolate spread

Preheat oven to 350 
Mix all dry ingredients, coffee flour, all purpose flour, monk fruit sweetener, chocolate chips, cereal marshmallows, cocoa powder, salt, and baking soda together until mixed well

in a bowl whisk together your milk, eggs, and melted butter until well mixed and add to dry ingredient mixture and mix well

add Reese's peanut butter chocolate spread mixture to all ingredients and lightly mix

pour into greased casserole dish

bake at 350 degrees until knife poked in center comes out clean about 15 to 18 minutes

let cool 10 minutes before cutting and serving

This brownie recipe would be great with ice cream or whipped cream, maybe even dusted with powdered sugar..

All I know for sure is that it was a hit here on the plantation, and i hope you enjoy it too..
