Hubby even went out in Hurricane Hermine to get them for us. Bless his cotton pickin' heart, and he doesn't even like squash and zucchini, But it was sweet of him so I won't even rag on him for putting hamburger steak on a bun with burger toppings. I keep going back picking at this parmesan zucchini and squash, in my opinion it was the star of the show tonight. Michael and Traci are on a date tonight, so they isn't here to critique it for me, Chris is at the hospital with Sierra tonight, and Hannah is at a play with grandma Rose, so No one to review it.. Clarissa and Roman won't touch it, Paisley can't touch it and Ryan the best I can ever get out of him is "it was ok" or something similar.
Speaking of Sierra, for anyone who read about her terrible wreck, she is in a rehab facility now and went outside, via wheelchair for the first time today. from where she was on day one, this is leaps and bounds. Prayers are still appreciated tho, because she still has a ways to go.
But, back to the recipe... This zucchini and yellow squash recipe is fairly simple and it's another put it in the oven and let it cook itself kind of recipe so easy peasy and you can be off playing with the grandkids, or kids, while it does its thing, also a great one to let little kids help with. Clarissa the 3 year old put the pieces into the pan as I cut them, and practiced her counting while she did that. How about that.. A great recipe and a homeschool lesson in counting to boot. Does it get any better than that?
Oven baked Parmesan zucchini and yellow squash
4 zucchini
4 yellow squash
1 packet lipton onion soup mix
1 stick butter
1 tbsp garlic powder
1/3 cup parmesan cheese
salt and pepper to taste
(remember the lipton onion soup mix has some salt in it so you won't need to add quite as much salt)
dash of cayenne pepper
cut zucchini and yellow squash into 1/2 inch or 1/3 inch thick round slices in a large bowl, in a separate bowl melt the stick of butter, add all spices and lipton onion soup mix and parmesan cheese, then stir to mix . Pour the seasoned butter over the squash and zucchini and and stir it all together to coat veggie slices. Pour evenly into greased casserole dish and sprinkle a little more parmesan cheese over the top. You can add parsley or chives if you want more color, thats optional.
cover loosely with tinfoil so that some air can escape (you don't want to stew them) (what i did was leave one corner open and cover the rest tightly) bake for 15 minutes covered and then remove tinfoil and bake an additional 25 minutes or until lightly browned in a 350 degree preheated oven.
