buffalo chicken bubble up with tater tots

Today started off not the best.. I woke up with the after math of last night.. By after math I mean hubby had a tantrum and threw his clean laundry in the floor right after i folded it, and so I got up this morning to see my hard work all over the floor. But that's ok, it was his laundry, if he wants floor laundry well i want him to have floor laundry. It's been in the floor almost 24 hours and Ive walked on it every time I've gotten near it. I'll pick it up eventually, but I'm not done being mad yet so... There it still lays... I guess it might seem petty but sometimes a wife needs an outlet for her anger that doesn't involve going to jail.. 

In other news I have been binge watching "The Goldberg's" on Hulu... My oldest has watched a few episodes with me and swears Im just like that mom. I see me here and there but not as much as she claims. I am only a part time "smother". I love this show tho. It reminds me so much of my own family. 


In other news, The Buffalo chicken bubble up I Made two nights ago was such a hit, they wanted it again the next night. I didn't give it to them, but I did kinda tonight.. One of them brought home a can of biscuits and so how could I refuse them? The problem was that as you know, our family is huge and one can of biscuits does not a casserole make around here.. So the original recipe that I  tweaked recipe was tweaked yet again. Thats right just crown me the queen of recipe tweaks. 

I am pleased to report this tweak was liked just as much as the first tweak. No left overs, which makes my heart happy. They liked something I made. But then, what will go in the leftover soup haha..




Here is the new revision, either you have on hand is great if your family is a fan of buffalo ranch...

 because of the froziness of the tater tots cooking time is a little longer

Buffalo Chicken Bubble Up
  • 1 can (12oz) refrigerated flaky pilsbury grand biscuits
  • 1 1/2 cups froze tater tots
  • 3 cups shredded buffalo chicken with juices
  • 1 cup bacon ranch liquid salad dressing
  • 2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

simmer raw chicken in slow cooker for 4 hours, or on stove on medium low heat for 3 hours in Frank's RedHot Wings Sauce and packet of Hidden Valley - Original Ranch dressing powder packet
Cut your biscuits in 4 pieces and place them in a mixing bowl, add frozen tater tots add to that half of the shredded mozzarella, and the liquid ranch stir to coat pieces then spread evenly in the bottom of a lightly greased casserole dish, 
on top of that add your shredded buffalo chicken and the juices evenly top with remaining cheese and baked in a 375 degree oven for 45-60 minutes until cheese is bubbly and brown.. 

You could completely substitute the biscuit pieces for the tater tots and I probably would have had my child not went to the trouble of bringing home the biscuits to make her (and I quote) new favorite dinner meal..
