Cheesy spinach grits and shrimp with bacon


I feel a little ashamed of myself  putting such delicious food on styrofoam plates. Something as delicious as this should have been displayed on some fine china or at least or corelle..


But we are talking about a family of 11 that's one corner we are just gonna have to cut around here cuz no one likes dish duty. 

I am not 100 percent certain what umami is... But if this meal doesn't have that then its ok by me cuz it got some "oooh mommy's" and that's close enough for me. Ok all but two are adults or teens and none call me mommy but you get the jist. 

We don't get to enjoy shrimp that often because we are on a pretty tight budget, But I had a great week selling decals on my Etsy shop so we were able to splurge a little, and oh lawd it was slap yo mama good..



Not only is it delicious but it only required 1 pot and 1 pan

So here is the deets

Cheesy spinach grits and shrimp

5 or 6 slices of bacon
shrimp
grits ( i used Quaker Quick Grits )
1 can chicken broth (I used Swanson Chicken Broth - 32 oz. - 3 ct.)
frozen spinach
salt
garlic powder ( I used McCormick Granulated Garlic)
onion powder ( I used McCormick Granulated Onion)
1 stick butter
lemon pepper (I used McCormick Seasoning Salt, Lemon and Pepper)
parsley
shredded cheddar cheese
parmesan cheese ( I used Kraft Grated Parmesan Cheese)
1/4 cup queso blanco cheese crumbled

Start desired amount of grits and cook per package instruction substituting the water for chicken broth
While that is cooking in a cast iron skillet start your bacon frying.

Cook bacon to done and set aside on paper towels to drain
in bacon grease add your shrimp 1/3 stick butter, garlic, parsley, lemon pepper, and cook until shrimp are bright pink
While shrimp are cooking add your cheddar cheese, crumbled queso blanco, parmesan cheese and spinach (I like just enough spinach to make it look like little green pieces of confetti are swimming around in there.
When shrimp are pink and grits are to desired consistency spoon some grits onto the plate top with shrimp (or serve on the side) garnish with bacon cheddar and parmesan and drizzle a little of the broth over everything and enjoy...
