Eating on a budget... 

4 meals from two packages of meat.

Night 1

Bacon wrapped grilled cheese burgers

recipe

large package ground beef
salt 
pepper
garlic salt
half package lipton onion soup mix
1/2 cup cottage cheese
tablespoon water
mix all ingredients let stand for 15 minutes to mingle flavors
pat burgers
wrap raw burgers in bacon and cook on grill

Night 2

7 layer casserole

layer 1 frozen hashbrowns 
layer 2 left over burger patties (i ground mine in the ninja butyou could just layer the unchopped burgers if you wanted)
layer 3  diced tomatoes
layer 4 mixed refried beans, corn, heavy whipping cream
Layer 5 provolone cheese
layer 6 black beans and diced tomatos
layer 7 mashed potatoes 2 eggs parmasian and cheddar cheese mixture
sprinkle parsley and light cheddar on top cover with foil bake for 1 hour at 400
remove foil and back for 30 minutes or until top is golden brown.

night 3 

corned beef and cabbage

rinse and place corned beef brisket fat side up in greased pan 
add seasoning package onion powder
cut cabbage into wedges (i usually do 8 or so wedges) lay them around edges of corned beef dont cover corned beef 
add salt and pepper to taste to cabbage only
pour in 1 can of beer (i use miller high life) and cut one stick of butter into cubes and put  on top of cabbage
cover with tinfoil and bake at 400 for 4 hours

night 4

add leftover corned beef chopped and cabbage and juice to two packages of frozen soup veggies 
add two cans diced tomatoes
2 or 3 cans of water (or v8 juice) enough to cover
(i also threw in some left over lima beans)
do not salt until soup has cooked for a while and is tested the salt in the corned beef may be enough
if not add salt and pepper and garlic to taste
simmer on medium low about 3 hours and eat


night 5 is leftover casserole and leftover veggie soup with cornbread

yummy stuff...

Chili

Being a southern mom I cant cook small meals I always end up cooking for an army

so 
night 1

chili
*use your fav recipe or here is mine

browned ground beef
3 cans diced tomatoes
2 cans kidney beans (not drained)
1 can black beans (not drained)
1 can refried beans
one onion finely chopped
1 can tomato paste
2 cnas water
1 can v8 juice
celery salt
chopped garlic
chili powder to taste
salt (to taste)
pepper (to taste)
simmer for 2 hours

here is where ti gets interesting

I add a package of hotdogs to my chili

the hotdogs simmer in the chili as it cooks

and on night 1 we have chili and night 2 we have chili dogs
if anything is left on might three 
I cut hotdogs into slices and add noodles and velveeta cheese and have hotdog chili mac

this one is a family favorite..
