Tonight's menu was Honey Curry chicken and roasted red onion and potatoes with Sriracha seasoning blend. I found the sriracha spice blend at Tuesday Morning, One of my favorite shops for spices and special things you can't pick up at walmart and the grocery store. I bought this a while back and have been a little scared to use it, Ive never used sriracha anything and I had this idea that it was going to be super hot, But it really isn't that hot at all. I mean I guess it could have been hotter depending how much you add but i didn't add a whole lot out of consideration for little mouths in the house. If I were to make this recipe again I would add a little more. But they turned out great and there were no leftovers.
Tuesday Morning , where I got this wonderful stuff pictured above is similar to Ross, or TJ Maxx, discount prices on name brand stuff. If you have one near you and have never checked it out you should. They are mostly home goods, spices, soaps, cleaning supplies, some furniture, and bedding,and towels, rugs, toys, games, dishes,etc... No clothes. definitely worth checking out.
So anyway here is what it looked like plated and the critics reviews were impressive I think I took home the bronze on this one.
Sriracha Roasted Potatoes
3 cups potatoes diced
1 cup red onion diced
2 tbsp oil
2 tbsp Ginger lemon Sriracha spice blend
1 tsp onion powder
1 tbsp Worcestershire sauce
salt and pepper to taste
mix all ingredients together until potatoes are coated well turn onto a cookie sheet bake at 350 until potatoes are golden brown about 35 minutes test potatoes for doneness by poking with a fork. If fork goes through easily potatoes are done.
and the chicken, honey and curry, nutmeg, garlic, all mingled together in a taste sensation that is almost orgasmic. Very very pleasing to the taste buds. LOL!!!
Honey Curry Chicken Tenders
10 chicken tenders
1/4 cup honey
2 tbsp curry powder
1/2 tsp nutmeg
1 tsp basil
1/2 tbsp garlic
dash of salt
1/4 cup coconut milk
1/4 stick butter
melt butter, add all other ingredients except chicken in a bowl and mix well, add chicken and stir to coat. place in lightly greased baking dish with sides, (NOT a cookie sheet or jelly roll pan.) cover with foil and bake at 350 degrees 35 minutes, uncover and bake an additional 10-12 minutes until top is brown.
It was served with leftover biscuits and Alfredo from last night.
