Cowboy casserole in a wheat tortilla wrapper with ranch dipping sauce

Cowboy Casserole Wraps

Casseroles are one of my favorite things to make, they are easy, they can stretch your ingredients and take ingredients meant to feed 4 and turn it into a meal to feed 11. Casseroles can be done in your crock pot or slow cooker, or in the oven and they pretty much cook themselves. If you stick around and follow me for very long you will see that I'll be posting a lot of casseroles. With such a large crowd to feed casseroles are a go to budget stretcher for me, and usually a crowd pleaser.

Most of the crew will just say it's good, or nothing at all, and I judge my success on the amount of leftovers on the plates and in the cooking pots. But not Michael. Michael is either the greatest suck up in existence, or he really enjoys my food, because more days than not he makes it a point to come into the room just to tell me how good the food was. He also gives me some good ideas for cooking. 

His report on Cowboy casserole was "mama I don't know what was in it but it sure was good, and in a wrap too, amazing!!!"




Well the wraps were an afterthought. Traci had bought some groceries that day and one of the things she bought was wheat tortilla wrappers. So I thought, why the heck not. 

Like I've mentioned before I never know what I'll be working with next. This was another use for those frozen hash brown patties, a can of campbell's tomato soup that one of them had bought, and a pack of ground beef that I purchase. I'm only throwing in that part about me purchasing something because I brag a lot about the things they buy food wise, and I just want to make sure no one thinks me a freeloader. I do buy things too.. haha.. I'm not sure that anyone cared that much about who bought what but It's a pride thing I suppose. I needed to tell you.

So this is what it looked like in the wrap. I am also pleased to report there were no left over.. Count them with me... ZERO leftovers..

We also had cauliflower with butter and lemon pepper.. I love that stuff..

Healthy Green Cookware

Cowboy Casserole


1 lb ground beef
1/2 can water (the campbell's soup can... they don't sell canned water so don't go shopping for that)
1 tbsp worcestershire sauce (or to taste)
1/2 cup diced onion
1/2 cup sliced jalapenos plus a few more to decorate the top
garlic powder to taste
salt and pepper to taste
approx. 8 hashbrowns (enough to cover the top of casserole
1 1/2 cups cheddar cheese
Ketchup (optional to decorate the top)
liquid ranch dressing (for dipping)

brown your ground beef (i like to do this I'm my cast iron skillet because it can go straight from the stove top to the over easy peasy..) 

drain you ground beef, while the beef is draining in your collender sautee your onions in the same cast iron skillet until onions are done

return ground beef to pan with onions, add all other ingredients except hashbrowns, cheese and ketchup and stir together until mixed well

add your layer of hash browns to cover the top of casserole 

add cheddar cheese evenly to the top of that

then sprinkle with jalapeno slices 

and swirl some ketchup across the top for prettiness

bake covered in a 350 degree oven for 30 minutes then uncover and cook an additional 10 minutes or until cheese is golden brown

allow to cool 10 minutes before adding to the tortilla wrappers 

serve with ranch dressing on the side for dipping. You could even add the ranch inside the wrap if you wanted
