Chicken jalapeno casserole with hashbrowns

Shredded Chicken Jalapeno casserole with hashbrowns and bacon ranch. That is what I finally come up with for supper tonight. It was a hit, no leftovers. I love no leftovers.. 

As I mentioned before, here on the plantation you never know what you are gonna get. One of the kids apparently likes jalapenos and brought in a jar of jalapenos, and my mom found a deal somewhere on a 40lb box of chicken for .89 cents a pound, and a case of frozen square hashbrowns similar to those they sell at McDonalds at breakfast time, and so she split both of those with me, and so that is what I was working with today. I am so glad to be blessed with such a good sharing, caring village. I am a big believer in the village and it takes a whole one to make a thing go round.

If you read my previous post you know I was searching recipes looking for inspiration, and sharing some recipe links. Well here is what I finally came up with and fed my crew tonight.

budget eating for a big family, casserole for large family chicken jalapeno,

Jalapeno chicken casserole with hashbrowns 


12 chicken thighs
1/2 cup canned jalapenos with juice
1 tbsp lemon juice
1 block cream cheese
9 square hashbrown patties
1 cup shredded cheddar cheese
1 cup broth from simmered chicken 

simmer chicken thighs in first 5 ingredients in crock pot for 5 hours, or on stove on low heat for 3 hours then turn off and allow to cool
when cooled shred chicken 
line a greased casserole dish with square hashbrowns
in separate bowl mix shredded chicken, campbell's cheddar cheese soup mix, franks red hot sauce, and bacon ranch dressing until mixed well, 
pour evenly over frozen hashbrowns pour 1 cup of broth from simmered chicken over everything in casserole dish
top with cheddar cheese jalapeno slices and parsley for color (chives would probably also be good but i didnt have that)

bake in a 375 degree over for 45 minutes or until cheese is golden brown.

Some variations that you might consider for add-ins

shredded lettuce
diced tomato
sour cream
avocado 
more ranch (when is there ever enough ranch?)
chives
scallions
spinach (also another of my favorites)

 The thing about life on the plantation is that its like a box of chocolates, you never know what you're gonna get. These kids might pick up random ingredients, and on occasion when she runs up on a deal too good to pass up my mom might stop by bringing random ingredients, and so with the help of the cooking channel, and especially the show "chopped" and of course pinterest I have become pretty good at turning those random ingredients into food.

Tonight I'm working with a package of chicken thighs, a jar of jalapenos, and some frozen square hash brown patties. Of course Ill add some other things in with it, but those are my three main ingredients. If this were an episode of "chopped" those would be my mystery basket items. Luckily I have way more time to figure it out, I don't have to start cooking 3 or 4-ish so in the mean time, I'm off to search the wide world of recipes for something that inspires me.

Is there anything better than a bowl of chili, I've tried many variations of chili with chicken and chili with beef i even tried a vegan meatless chili once, oh and there was that one recipe that called for cocoa powder.. YUM!!!  and I loved them all, I don't think I've ever met a chili i didn't like. But white chicken chili, this I have never had this one is going on my must try list and this one will be tried very soon. I would eat chili 7 days a week if I could.

you know I bought that meat grinder that I have never opened, because I read that I can grind meat in my Ninja food processor. But this might be the perfect excuse to crack open that box.

Crockpot Pulled Pork

Pulled pork, pulled chicken, pulled beef, I love any meat that's been pulled and ready to go on a bun. Slow cooked pull meat sandwiches are right up there with chili I would eat that stuff everyday.

Jalapeno Popper Taquitos

I've never had taquitos, but this recipe makes me want to try it. I'm a fan of mexican food too... Haha let me not lie to you.. I'm a fan of food in general.


So after all these great recipes, I'm leaning towards doing something in the crock pot. Ive added cream cheese to my list of items my supper must have. I'm thinking something Jalapeno popper  ish in flavor. But not soup. Hubby will flip his bitch switch over soup, I can hear him now.. "I work all day and you want to feed me a bowl of cracker water"... But if I can convince him its chili, then that is acceptable. (sigh... The joys of living with a picky eater... and its not even a flavor thing, its a looks thing. It has to look pretty for him to even touch it.. :P)
