Just saw the aunt with uterus cancer, she seems in pretty good spirits, she is doing the chemo and radiation, but was driving today, and out and about and looking healthy. She totally rocks the bald look. She needed a yeti decal for a birthday gift. Below is the design I made for her. Its kinda hard when they say "I need a monogram decal, just anything with these initials on it. I always worry that they won't like what i come up with but she seemed pleased and told me she would be back next time someone had a birthday. So all is good with that.
God is continuing to bless me with orders on my Etsy shop and locally on a steady basis and I am thrilled with that because every penny counts in this huge family. The orders I've been getting have made it possible for my family to go out to eat, something we rarely get to do. It has hubby to buy some parts needed for my vans transmission to be replaced. It has made it possible for me to get lazy in the supper department tonight. (I'll tell you more about that in a bit) Im not getting rich by any means, but it has made a difference in worrying how to stretch the meal budget to being able to splurge for O'Charley's once. Usually my family goes out to eat as a family once a year, at income tax time. One or two of us might go out together from time to time, but for the whole crew to go out, even to an inexpensive place it's nothing for us to drop a $100 for one meal, Anyway all of this is to say I feel so blessed that God has thrown us a few bones recently.
Now, for the explanation about the lazing out on supper.. In my defense I DID take chicken out to thaw for tonight's supper, but it didn't thaw as fast as I'd hoped, and when Hannah came in from work telling she was starving, well, I can't have my hard working girl starving, so it was off to Bojangles... Thats right folks.. Bojangles.. The chicken in my rotel chicken nachos was bojangles chicken tenders. Which meant this recipe took all of 20 minutes to throw together.. The recipe I will share will say shredded chicken, but you can in a pinch use pre-cooked rotisserie chicken, or fast food chicken tenders but let's not pretend the home cooked doesn't taste the best. This recipe is adapted from a couple of recipes I found on pinterest, one for a rotel velveeta dip. The other for a Rotel chicken mexican casserole. My child was starving I didn't have that kind of time.. So This was born, and when I asked the masses was this recipe a keeper or not, they all said yes it was one of the best yet... So.. Here it is..
Rotel chicken nachos
2 cans rotel tomatoes (not drained)
1 block velveeta cheese cubed into 1 inch pieces
1 cup cooked black beans
2 cups shredded chicken ( i used bojangles chicken tenders chopped very fine)
1/4 cup chicken broth (optional, if you use home made shredded chicken you wont need this the juices from the chicken will be enough)
simmer on medium low until cheese is melted and then serve over tortilla chips or doritos, I even think this recipe would be awesome with fritos.
Topping ideas
Bacon bits, chives, scallions, onions, jalapenos, sour cream, cheddar, black olives, shredded lettuce, diced tomatoes, ranch dressing, verde sauce, salsa, avocado, whole kernel corn.
These are just some Ideas try as few or as many as you would like. I served this tonight with sour cream, cheddar, and jalapenos and it was freakin' awesome..
