Pineapple, tater tots, spam, and cheese, 4 ingredients quick and easy dinner from the oven in 20-25 minutes.
Well it's been a hell of a day on the plantation, and by plantation I mean... not a plantation.. but this is my story and I'm calling it a plantation.. So, meanwhile back at the plantation. I had 4 orders to fill today for decals, one custom order. The three year old wanted to help the hubby was on my last nerve, and I get so frustrated with myself because I always mean to take pictures of the stuff I make to share, but never remember to do it. I did however remember to take pictures of supper to show you all. I don't know about anyone else but I love spam. I have always loved it. Im not a big fan of processed foods but unfortunately it's cheaper, but even if I could afford all the finer ingredients that I see on the cooking shows and want to use, spam would still have a place in my heart, and my pantry. If you are not a spam loves tho, the spam in this recipe could easily be replaces with leftover ham, or even deli ham slices. You will find that most of my recipes leave plenty of room for adjustments to whatever you have on hand. When feeding the masses you have to roll with what you got sometimes. Plus spam and pineapple make me feel a little hawaiian vacation-ish
To make a long story short it was not the best day ever but we have muddle through it without too much conflict, and that is always something..
This was not at all what i intended to cook tonight. This was not adapted from any recipe I found online, this was an oh shit what do I cook moment.
I originally wanted to slice and fry my spam and top it with pineapple and american cheese on biscuits with dijon mustard.
But I forgot to put the biscuits on the list when I sent my daughter to the grocery store, and its like a billion and five degrees out there so I took pity and did not ask her to go back..
So, this was born..
Baked spam and pineapple tots
2 cans spam cubed
2 cans pineapple chunks (one drained on with juice)
2 cups froze tater tots
1 1/2 velveeta shredded cheese
dump all ingredients EXCEPT CHEESE in mixing bowl and stir until everything is coated in the pineapple juice then spread evenly in a lightly greased casserole dish. cover with cheese and bake in a 375 oven for 20- 25 minutes until cheese is melted and starting to brown.
I served with pizza sauce on the side to make it more like a ham and pineapple pizza kind of thing but that is optional.
Im not sure if this one is a keeper or not. I enjoyed it and the two at home enjoyed it but the rest are not home yet and have yet to chime in on it.. Ill let you know when they do.
