Day 4 $88.00 grocery budget for huge family

Pork and rice wraps, with ranch for dipping, green peas, and pineapple cake. I'm kicking this $88.00 grocery budgets ass. It makes me feel accomplished when I can feed a large family of 11 on the meagerest of budgets. A lot of thought goes into it.

Ive been binging on Hulu this evening, and Ive completed every episode of "The Goldberg's" which I found hilarious. I also watch every episode of "Superstore" another one I would recommend, and can't wait for new episodes of both of these shows.

I got a little frustrated with myself today I had 3 vinyl decals to cut and two I cut wrong and had to re-do. It stinks to be budgeting and have to recut not one but two decals. I'm thinking of doing a series of How to videos on decal and shirt making soon. Look for those in the near future.

I also want to do a series of posts on How to make money with your blog, if that ever pans out for me. I've made a few bucks here or there, and I've been reading all the how-to's and trying some new things. I have had this blog since 2009 and I have to admit the research I have done lately has been serving me well, I've got more traffic, and made more money recently than ever in all those years. But Im still not quite getting rich from my blog. But I'm hopeful and believe you me, if I ever do, Im going to clue you folks in.. and for free too..

But now with all my rambling done, let me move on to the Budgeting and how I stretched $88.00 worth of food for 4 days so far and fed 11.. well 10 on that budget. (the baby is still bottle fed)

Now here is how I made it all happen.  If you recall last night we had pulled pork.  There was about a cup of that left so with a little filler and some cheese and spices it became tonight's burritos, and I served that up with some ranch dressing on the side and some sweet green peas. I think it turned out pretty well. IF Id had the money in the budget I would have added some canned corn and tomatoes too it, but working with what I had this week, here is what I came up with.


Pork burritos

1 cup pulled pork
1 cup white rice
2 cups chicken broth (or water)
1 packet taco sauce
salt to taste
parsley for color
tortilla shells
2 cups shredded cheddar
ranch dressing for dipping
Put all ingredients except tortilla shells and cheddar in a skillet and simmer covered on medium low 1 1/2 hours stirring occasionally but not too often because your rice will lose its shape and become mush if stirred to often 2 or 3 times lightly during cooking is plenty. When mixture has done cooking dip into tortilla shells cover with cheese and wrap. Serve with ranch dressing for dipping.

On a more budget friendly week I would have added some of these ingredients and you can add any of them if you chose

canned tomatoes 
whole kernel corn
black or refried beans
shredded lettuce (as a topping)
guacamole
sour cream
salsa

But the masses were fed and no complaints so I am patting myself on the back.
