This was a new recipe for baked mac n cheese, on a scale of 1-10 Id rate it about a 7 Id have rated it higher if I hadn't overcooked it. It was actually a crockpot recipe where you dump in your uncooked pasta and all your other ingredients and let it cook in the crock for several hours. Well since I was using my slow cooker to soak the dried beans I plan to cook today, I decided to try it in the oven. I wasn't sure how to change the cook temp and time to be sure the noodles got done, but what I did worked out well.. I would add a little more liquid next time tho. Here is that recipe with the addition of more water.
Baked mac n cheese
1 box macaroni noodles
1 can campbells cheddar cheese soup
1 1/2 cups shredded chedder (reserve half of cheddar for topping)
1/3 block velveeta cheese cubed
1/3 cup cream cheese or sour cream
1/4 cup parmesian cheese
2 eggs beaten
1 stick butter melted
1 cup milk
1 cup water
salt and pepper to taste
in a large bowl mix together all ingredients except the cheddar reserved for topping, and the uncooked pasta.. Mix ingredients well then pour in your uncooked pasta and stir to coat. Transfer this to a greased oven dish and top with the remaining cheddar. Cover and cook for 1 hour at 200 degrees
remove cover turn oven up to 325 and cook about 30 more minutes until top is browned.. Its going to seem like alot of liquid but remember you need enough to cook your pasta.
Meatloaf
2 lb ground beef
half of a tube of jimmy dean ground sausage
1/4 cup each of onion, bell peppers finely chopped
1 egg
2 tbsp water
garlic finely chopped
3tbsp dijon mustard
1/4 cup very finely crushes cheetohs
(we like jalapeno flavored. This is in place of bread crumbs, doritos, and funyuns are also awesome as bread crumb alternatives)
for meatloaf glaze
1/4 cup dijon mustard
1/3 cup ketchup
2 tbsp vidalia onion jelly
mix all meatloaf ingredients well let set for 30 minutes before cooking
for the glaze in a saucepan mix all glaze ingredients and salt and pepper to taste simmer just until jelly has melted pour over your meatloaf and spread with the back of spoon to coat top and sides cover with foil and bake 30 minutes
remove foil after 30 minutes and bake an additional 30 minutes
Curried Broccoli
froze broccoli
half stick butter
3 tbsp apple juice concentrate (the stuff from the freezer section of the grocery store)
curry powder to taste
salt
in frying pan add all ingredients and cook over medium heat stirring frequently to coat broccoli with sauce until heated through. I like my broccoli a little crisp but some may not I think cooking time is all about that you prefer when it comes to broccoli
That is what was cookin' last night. I haven't forgotten to post our chopped desserts ive just been busy. I will try to get that up today. Christmas time tho... whew.. It's been busy.
