Orange chicken casserole




Tonight we had orange chicken casserole. It has all the goodness of orange chicken from the Chinese place, but its easy peasy casserole style so you don't have to fuss over it, just pop it in the oven or crock pot and let it tend to itself.

As I have mentioned before I can turn anything into a casserole. Haha you thought I was exaggerating I bet.. But nope.. I can literally turn anything into a casserole. I have self proclaimed myself the casserole queen. But living with all the Plantationites a girl gotta do what a girl gotta do. Casseroles get the masses fed.

So this recipe started with my love for the orange chicken out local Chinese place serves, and when I found a recipe for for orange chicken that seemed fairly "no fuss" I also noticed that in the original recipe tat I tweaked, the orange chicken was served over rice. So I thought hey. Why couldn't I impart all of this orange chicken goodness into the rice too and make it a flavor fest of orangy goodness all around. So I did, and I am very very glad I did. I will be glad again when I make this in the future too. Cuz it was AWESOME!!!

I mean come on folks, why would you have plain white rice when you could so easily have all the flavors of orange chicken running rampant throughout chicken and the rice? Makes no sense to me why you would ever NOT casserole the delicious flavors of orange chicken. I just don't grasp the concept of it ever being done any other way.

I have to level with you.. There were two plantationites who would not even touch it because it wasn't "pretty enough", but I am guessing that if I had thrown some green onions on it, or sesame seeds and dolled it up a bit they would have been on it like white on rice.. Hahaha or orange on rice in this case. But those who ate it, me, Ryan, Traci, Clarissa, and roman we loved it, and 4 out of the 5 of us went back for seconds..

The others were not home on a weekend night. So they ate I'm guessing something super processed from some fast food place. God Love 'em.

But that's OK, cuz the rest of us had orange chicken and it was hella good.

HERE is the original recipe for orange chicken that  I tweaked, then below the image you can read the recipe I followed that includes my changes to the orange chicken recipe. Made either way I think you will love this orange chicken recipe, and its simple and easy, you can cook it in your crock pot, or slow cooker, or in your oven like I did, and it is still going to be dynamite... I hope you enjoy.

Orange chicken casserole

  • 4 Boneless Skinless chicken breast, thawed, and diced
  • ¾ cup Smuckers Sweet Orange Marmalade
  • ¾ cup of Sweet Baby Ray’s Original BBQ Sauce 
  • 2 tbsp. Soy Sauce
  • 1 cup white rice
  • 2 cans coconut milk
  • 1/3 cup of chicken broth
  • dash of salt

in large bowl mix all ingredients together stirring to mix everything well, pour into casserole dish that has be sprayed with cooking spray. Cover with Tin foil and bake for 2 hours at 350 degrees then uncover and bake an addition 12 to 15 minutes until broth has thickened the broth will thicken more as it cools so don't let it get too dry in the oven.
