Well of the 10 living here (myself excluded) half of my people are leaving me for the entire weekend. A lake trip for one of the young adults 22nd birthday. All 5 going are of adult age, I couldn't stop them if I wanted to, well I could.. But I'm trying to work on being less of a "smother". I'm telling you that show "The Goldberg's" really opened my eyes to some of my craziness and I'm trying to back off some. I'm still going to worry, because that's kind of my thing. But seriously do you know how many different things could go wrong? Do you? Well I do, and I could tell you, but that's for another post.
I get to baby sit the girls the entire weekend. By "get to" I mean I'm praying for the best. Clarissa is no problem, she gets into things here and there and she's your typical 3 year old. But little Paisley, oh that one is a handful. She had some problems shortly after she was born with not gaining weight fast enough (according to doctors) and she spent some time in the hospital while they ran tests about it all, and then finally after a week they decide she was ok. (that's another story too) during that time when she was being poked and prodded by so many doctors her mama held her A LOT, and for a while after she held her A LOT, and now the poor thing is so mama spoiled its hard for anyone else to do anything with her. So this will be good for her, and me I suppose. A test of endurance, a future blog post in the making. Coming soon to a blog near you... "10 ways to sooth a crying baby" It's gonna be great..
Needless to say the crowd I cooked for tonight was smaller and I didn't need to try to stretch things quite so far. The ones still here are taking advantage of the seconds, and thirds they are getting because I still cooked like I was feeding an army, quantity wise. I guess them going back for more is a sign that I did well on this meal.
Tonight we are having, meatloaf (a mixture of ground beef and ground turkey), no boil baked mac n cheese, and green beans with french fried onions. I didn't make a dessert tonight, I can make us some Reese's peanut butter chocolate spread on bananas later if we need a sweet snack.
In other news before we delve into the recipes, I want to brag a moment about the t-shirt and decal business on Etsy, I have to say, I don't know if this blog is what is making the difference for me or not, but around the time I started blogging again on a regular basis I have noticed a great increase in my sales and if you guys reading me are the reason for that I want to thank you very very much. There are times around here when I don't know where our next dollar will come from, and then God, and some wonderful soul come together and a decal, or shirt is sold, and while its not enough to get rich on. It's always been enough to provide for a need we had at that time. Yes, I know how blessed I am, and It humbles me.
Turkey/beef meatloaf
**Note*** This meatloaf is a mixture of ground turkey and ground beef because Bilo had ground turkey B1G1 this week, so I did. But this recipe can be tweaked to use all ground beef, chicken, pork, or any mixture of the above.
1 lb ground turkey
1 lb ground beef
3 tbsp Franks red hot (I wasn't lying... we put that shit on everything)
2 tbsp ranch powder
1/4 cup french fried onions
1/4 cup crushed buffalo pringles (sometimes I use snyder of hanover buffalo wing flavored pretzels crushed)
celery salt to taste
2 tbsp water
garlic powder to taste
topping
2 tbsp Frank's red hot (for top)
1/4 tbsp ketchup (for top)
1 tsp ranch powder (for top)
sprinkling of french fried onions
additional ketchup for decorating (optional)
parsley (optional )
normally I would add onion, but because of the french friend onions I did not this time but you certainly could.
mix all ingredients that are not specified as being for the top in a large mixing bowl until mixed well and shape into a loaf in a greased baking dish with sides because this will create juices
in separate bowl mix ketchup, franks red hot and ranch powder and and coat top and sides of your uncooked meatloaf, cover tightly with tin foil and cook in a 350 degree oven for 1 hour.
(Its best to let set 10 or 15 minutes at room temperature before putting in the oven but in a hurry I don't always do this.)
uncover (at this point i like to draw diagonal lines in both directions forming a cross patter, or squiggly line with ketchup, (just cuz it makes it look pretty) add french fried onions and parsley and bake uncovered 10 more minutes. let stand 10 minutes before serving.
The Green Beans
1 package froze green beans or 2 cans
half stick butter
salt to taste
Heat on stove top on medium heat covered stirring occasionally until butter is melted and beans are warmed through about 20 minutes
No boil baked Mac N Cheese
1 box elbow macaroni
1 half jar alfredo sauce
1 cup chicken broth
1 cup shredded cheddar cheese
1 stick melted butter
1/4 cup milk
1 more cup shredded cheddar cheese for topping
pour into a greased baking dish that will leave a bit of room for pasta to expand as it absorbs juices
Top with remaining cheddar cheese cover tightly and bake for 1 hour in a 350 degree oven, remove foil and bake an addition 10 to 15 minutes until cheese on top is bubble and brown.
Tomorrow I am making something with the left over lb of ground beef from my 2 lb package that went into this, and something with Bananas.. Not sure what yet, but... I'll let you know...
